Langres Chalancey is a soft, raw cow's milk cheese from the Champagne region of France, known for its distinct aroma and flavor profile - this is a delicious pungent "stinky" cheese with a bold, distinctive aroma! Originating from the high plains of Langres, this cheese is recognized by its smoky-bacon scent, which is less intense than the famous Époisses but still carries a robust, salty tang.
When young, Langres has a firm and slightly grainy texture that melts smoothly in your mouth, offering a complex taste. As it matures over a period of 5 to 6 weeks, the cheese becomes creamier, with the rind breaking down into a smooth, rich surface. This farmhouse cheese is unique in shape, often resembling a small cone or cylinder with a characteristic hollow top.
During the aging process, Langres is kept in humid cellars and regularly washed with brine, either by hand or with a damp cloth. This treatment encourages the growth of orange bacteria and yeast on the rind, resulting in its vibrant color and distinctive flavor.
