Following the blog, I decided to try the Hackleback. It was exactly as described. Really great US sturgeon caviar when you want to treat yourself without the price tag of imported options.

When initially trying a taste...it tens to stick to your tongue. After a minute the flavor comes through. It will be an acquired taste for me. Consistency is good and texture is good.
We love this merger, it is fantastic in this recipe we make, Merguez sausage bake with Moroccan couscous. It is a fantastic dish in the cooler/cold weather. It has some "kick" to it that warms you to the core. We will be back to order more.

Tastes like some of the more expensive caviars with just a bit more salt. Beats the paddlefish.
