Lamb Merguez Sausage - USA

This long, thin traditional Lamb Sausage comes from the Middle East and North Africa. It is also popular in France for its intense spicing of harissa and cumin and is traditionally smoked over coals to enhance its smoky flavor. The best quality meat is taken from the shoulder and neck of the lamb for these sausages.

Let your Sausages come to room temperature before cooking. Preheat the pan with a fine film of oil, though not too hot as this could cause the sausages to split. Don't overcrowd the cooking base and cook through on medium heat, until rich in color, caramelized and firm to touch. This sausage works perfectly with grilled lamb chops, couscous, and hummus.

Unless it has a casing, Merguez can be a loose sausage at home. As a burger, kefta, or Middle Eastern meatball, loose merguez can be served. If the sausage meat is removed from the casing, it can be added to ground beef to create spicy burgers with a lamb flavor.
