Prepare the Zucchini slices:
- Slice zucchini lengthwise (3–6 mm thick).
TIP: Test one slice first by frying it to ensure the thickness is just right for rolling. Adjust thickness or frying time if needed. - Lay the slices on a flat surface and sprinkle lightly with salt and pepper on both sides. Set aside.
Prepare the Batter:
- Beat the eggs in a medium bowl.

Fry the Zucchini:
