Instructions

Prepare the Zucchini slices:

  1. Slice zucchini lengthwise (3–6 mm thick).
    TIP: Test one slice first by frying it to ensure the thickness is just right for rolling. Adjust thickness or frying time if needed.
  2. Lay the slices on a flat surface and sprinkle lightly with salt and pepper on both sides. Set aside.

Prepare the Batter:

  1. Beat the eggs in a medium bowl.
  2. Add a dash of salt and pepper, and whisk until smooth.

Fry the Zucchini:

  1. Heat Abel Avocado Oil in a large skillet over medium heat. Test with a drop of egg mixture—if it sizzles, the oil is ready.
  2. Dip each zucchini slice into the beaten eggs, ensuring both sides are evenly coated.
  3. Fry until golden brown. Avoid overcrowding the pan; fry in batches if necessary.
  4. Place fried slices on a paper towel-lined plate to drain excess oil.

Make the Spread:

  1. In a small bowl, mix mayonnaise, pressed garlic, chopped parsley, lemon juice, and a pinch of salt and pepper. Set aside.

Assemble the Rolls:

  1. Once the zucchini slices have cooled, take one and spread a thin layer of the garlic mayo mixture on one side.
  2. Add two small julienned tomato sticks at one end of the slice.
  3. Place a small parsley bunch (2-3 leaves) with the leaf peering out over the edge of the zucchini.
  4. Roll the zucchini slice into a spiral and secure it with a wooden toothpick.

  1. Arrange the rolls on a serving platter.
