Bowfin caviar, sometimes referred to as "choupique" caviar, comes from the roe of the bowfin fish.  Bowfin caviar, also known as "choupique" caviar, is produced from the roe of this ancient fish species. The bowfin is a unique species, native to North America, known for its resilience and distinctive appearance.
